Bánh Xèo is a popular Vietnamese dish known as “Vietnamese sizzling pancakes.” Traditionally made with pork and shrimp, it can easily be adapted for a delicious vegetarian version.

Ingredients

For the Pancake Batter

  • Rice flour: 1 cup
  • Turmeric powder: 1 tsp
  • Coconut milk: 1 cup (or water)
  • Salt: 1/2 tsp
  • Water: As needed to adjust consistency

For the Filling

  • Tofu: 1 block (about 14 oz), firm, pressed, and sliced into thin strips
  • Mushrooms: 1 cup, sliced (shiitake or button mushrooms work well)
  • Bean sprouts: 1 cup
  • Carrot: 1, juliennened
  • Green onions: 2-3, chopped
  • Fresh herbs: (optional) Such as cilantro, mint, and Thai basil for serving
