Bánh Xèo is a popular Vietnamese dish known as “Vietnamese sizzling pancakes.” Traditionally made with pork and shrimp, it can easily be adapted for a delicious vegetarian version.
Ingredients
For the Pancake Batter
- Rice flour: 1 cup
- Turmeric powder: 1 tsp
- Coconut milk: 1 cup (or water)
- Salt: 1/2 tsp
- Water: As needed to adjust consistency
For the Filling
- Tofu: 1 block (about 14 oz), firm, pressed, and sliced into thin strips
- Mushrooms: 1 cup, sliced (shiitake or button mushrooms work well)
- Bean sprouts: 1 cup
- Carrot: 1, juliennened
- Green onions: 2-3, chopped
- Fresh herbs: (optional) Such as cilantro, mint, and Thai basil for serving
